Eggplant Pie
INGREDIENTS
· 2 eggplant
· 2 sweet red pepper
· 2 onions
· 2 tomatoes
· 2 garlic cloves
· Vegetable pie dough
· Sea salt
PREPARATION
1. Peel and chop the garlic and mix it
with oil and salt
2. Bake the eggplants, the sweet red
pepper, the onions and the tomatoes
3. Peel and cut the baked vegetables
into strips. Add oil and garlic, and stir. Cover the tray with half the pie
dough, arrange the vegetable filling, and cover with the remaining dough
4. Bake the pie
5. It can be eaten warm or cold
